Recipe: Cha Choy Pork (Stir-fried Lean Pork with Preserved Szechuan Vegetable)

Here's another really simple everyday chinese dish that you won't see in big chinese restaurant - the Char Choy Pork or Stir-fried Lean Pork with Preserved Vegetable.

Char Choy is actually chinese pickled mustard root, it is also known as Szechuan Preserved Vegetable.


The ingredients:
250 g of Lean Pork, sliced thinly.
1 Char Choy, sliced into long thin strips. ( Wash and soak it with water).
7 cloves of garlic, roughly chopped.
1/2 cup of water.
2 tablespoons of dark soy sauce.

Heat the wok, add 3 tablespoons of oil. Put the garlic in and saute until the garlic started to turn brown.
Add the pork in, stir-fry for 3 minute.


Add the Char Choy in. Stir-fry for another 2 minutes. Add in the soy sauce. Stir-fry another 2 minute. Add in water, stir-fry until the sauce thicken. For this dish, I usually thicken the sauce with a bit of corn flour mix with water. (1/2 tablesponn of corn flour mix with 1/4 cup of water).
